Is it possible to display that information in the interface?

I have tried to find a mod to be able to see in the game interface, as in the definitive edition, the number of villagers who are working on collecting each resource.

For now I haven't found it and I don't have the knowledge to do it on my own

Use the community patch and enable the advanced interface.
