Depends on your civ, with Goths using huskarls could work, other than that you'd possibly have to look at a sh*t tonne if skirms, siege onagers if you can shield them with some cheap units.

siege rams, paladins, skirms, korean SO, turkish BBC etc etc etc

as for deathtrap chokes: dont run into them, find another way round
